Yesterday was Valentine day hope you guys had a great day. We didn’t go out to eat, it was very cold and I didn’t want to leave the apt so we stay in and cook this delicious dish. Cou Cou it’s a renowned, favorite local dish of Barbados. This specially dish is made from local corn meal and okra which is vigorously stirred with a cou cou stick while mixed with the liquid of the okras.

Bring to boil the okra and water, as it boil the water will begin to get like glue, pour into a bowl as the liquid and the okra will mix in with the meal. Leaving a little liquid in the pot add the meal and stir until you reach a creamy consistence, then add more of the liquid and meal and stir, you’ll do this until the liquid is gone , make sure it’s creamy not lumpy because it wouldn’t tast good. served hot right out the pot, this delicious meal is usually served with steamed fish, salt fish , or red herring but I serve mine with a pink salmon sauce.
