Yeah to April it’s here and soon we will celebrate Earth Day so I am looking forward to that. Also in this month I am going to dedicate some words I used everyday, that really don’t make sense like OMG and OG or Jesus this and that. Every little thing that goes wrong these words come flying out, like if I am walking and I stamp my foot or I saw something in a store, these are the first words that comes to mind and I find it very dramatic. So I have to try and stop saying them.

I did a DMV practice test on-line and I went on Tuesday and took the test and pass. So I should start learning to drive soon I think, in my mind I see myself parking but not driving I am a very good parker in my mind. My hd double park one day and I was alone a spot came vacant and I couldn’t move the car. So embarrassing, I will learn just to get myself out of situation like that. Have a great weekend and remember God is good all the time.

I’m not going to be doing any heavy cleaning like I do for the holidays  but I definitely will move some chairs to get the dust ball, and transfer my  plants I think they out grew their pots , God is good all the time.

For my Future Grandkids

For if you come and I hope you do, I will be patiently waiting for your arrival  and I will welcome you just as the sky is blue and the sun is bright or the stars full the sky on a warm night. And I should hold you in my arms for the first time and check every inch of your body with kisses. And I should ask for you to be with me every other weekend how else will you know me . I will teach you everything for I am your past and you are my future I will be so happy with you.

What’s Cooking Today

Yesterday was Valentine day hope you guys had a great day. We didn’t go out to eat, it was very cold and I didn’t want to leave the apt so we stay in and cook this delicious dish. IMG_3002Cou Cou it’s a renowned, favorite local dish of Barbados. This specially dish is made from local corn meal and okra which is vigorously stirred with a cou cou stick while mixed with the liquid of the okras.

Salt to tast

Bring to boil the okra and water, as it boil the water will begin to get like glue, pour into a bowl as the liquid and the okra will mix in with the meal. Leaving a little liquid in the pot add the meal and stir until you reach a creamy consistence, then add more of the liquid and meal and stir,  you’ll do this until the liquid is gone , make sure it’s creamy not lumpy because it wouldn’t tast good. served hot right out the pot, this delicious meal is usually served with steamed fish, salt fish , or red herring but I serve mine with a pink salmon sauce.

Yesterday  hd and I were talking and we decided it was time to build our house in the Islands near the beach. This  would be our first big project together and I am super excited and thrilled and hope he we would agree on everything.  We look on Houzz web site and saw lots of beautiful homes and fell in love with two of them.  We want to build a little guest cottage first,  before we get started on our family home, in this way we will have extra money coming in and also we could be hands on for the next project. This little cottage is one of  many homes we saw, it reminds me of the houses I grew up around.  Nothing to big but livable, inviting and able to clean in a second.  At the end of the year I will be heading down to get things started. 

Leaving Barbados thirty years ago and coming here I never thought I would ever miss home because everything here are so exciting and I love it.  But I think its time for me to relax and I want to do it the Island way, I miss the beaches the breeze and mostly having a garden. Whenever I go home I stay with my mom and it is really great seeing and being with my family for that short time we have together, however I don’t like moving that much or talking and all this running around or even going over to they house I just like to stay put, you would think people in the island would be lay back.  I don’t know where they are going because the place is not big but I do get they mean well and I love them for that. By the time I get back to New York I’m more tired then before. So having a place of my own will make me a little more settled and give me a little more time to hide out and have a cocktail before letting anyone know I am in the land. God is good.

  Rosemary and Lemon Risotto

Cooking has began a favorite weekend activity for me and hd. Every weekend we experiment our skills on a new recipe. What’s cooking in our kitchen this  weekend is a recipe from Les Food Amants blog. This dish is so easy and tasty  we had  lots of fun preparing it . We thought it would taste like the grated rind of lemon or the rosemary but to our surprise it didn’t.  We had second and even have left overs so great. Thank you guys for such a great recipe that allow me to stay with in my limit, God is good.
