What’s Cooking Today

Yesterday was Valentine day hope you guys had a great day. We didn’t go out to eat, it was very cold and I didn’t want to leave the apt so we stay in and cook this delicious dish. IMG_3002Cou Cou it’s a renowned, favorite local dish of Barbados. This specially dish is made from local corn meal and okra which is vigorously stirred with a cou cou stick while mixed with the liquid of the okras.

Salt to tast

Bring to boil the okra and water, as it boil the water will begin to get like glue, pour into a bowl as the liquid and the okra will mix in with the meal. Leaving a little liquid in the pot add the meal and stir until you reach a creamy consistence, then add more of the liquid and meal and stir,  you’ll do this until the liquid is gone , make sure it’s creamy not lumpy because it wouldn’t tast good. served hot right out the pot, this delicious meal is usually served with steamed fish, salt fish , or red herring but I serve mine with a pink salmon sauce.


What’s cooking Today

IMG_2906Ever since I set the needs and wants calendar I keep surprising myself, with a limit of $10 a week  which I thought would be the  hardest thing ever, but  today is the 10th days out of this month and I only spend 99cent on tomato past for this dish I’m cooking. I am doing very well with my limit so hopefully I save a lot more at the end of the year.  

First time I made this dish I fall in love with it, now it’s my go to weekend pasta dinner,   for when  I don’t want to spend to much time in the kitchen . I cook the turkey  with a little olive oil and onion first  because I didn’t wanted it to be to dry, then I started on the sauce when  finish I mix the turkey in. I always used whole wheat penne but I didn’t had any .  With this recipe I sub a lot and you can to like I used fresh plum tomatoes and also organic ground turkey, a bit of red wine and butter  I even opt out of pepper, fennel, and the oregano as you can see this dish is very delicious.          

3 tbsp extra virgin olive oil

1 onion, finely chopped

2 garlic cloves, finely chopped

8 oz ( 250g) Italian sausages, skinned and crumbled

1/2 tsp crushed red pepper  flakes

1 tsp fennel seeds

1 tsp dried oregano

1 tsp tomato paste 

1-14oz (400g) can chopped Italian plum tomatoes 

salt, black pepper

1/2 cup (125g)  heavy cream

1lb (500g) dried pasta

freshly grated parmesan to serve

Heat oil in a pot, cook onion and garlic over medium high heat, stirring frequently, until soft and pale gold, 5 minutes. Add sausage, cook, stirring to break up, until colored, 10 minutes. Add red pepper flakes, fennel, oregano, tomato paste, and chopped tomatoes. Simmer, stirring occasionally, until thickened, 20 minutes. Add cream. Cook, stirring until heated through. Add salt and pepper to taste.

Meanwhile, cook pasta in a pot of boiling salted water, until firm to the bite, drain add pasta to the hot sauce toss well to coat with parmesan enjoy.




Needs and Wants Calendar 2016

IMG_2893Today is the first day of the new year, and I intent in making some unforgettable memories and fulling my days with laughter. As I say I’m making my month to month sacrifices on the calendar with my needs first and my wants at the very end. So here is my list of sacrifices. 

1. Limit my spending. I wanted to start out the month a little vintage, so I focus on money which I will limit myself 10 dollars a week until the end of the year.

2. Leave my cell home for a day. Not taking my cell will help me to be on time.

3. Stay offline for a day. Staying offline will give back a little more time to me.

4. Have dinner once a week with my kids. Dinner with the kids will bring our love and respect for each other more stronger.

5. Cook dinner with my hd one night a week. Cooking dinner with my hd is showing my appreciation and love for him.

6. Take a moment for myself each night before bed. Don’t be afraid to take a moment every day for yourself it will help you to be focus and calm you down.

7. Do one challenging task this month. Try going out of the way for the next person making that person feel special, it will be a little challenging but it will all worth it.

8. Check my end of month spending and save any remainder. At the end of each month I will be checking my spending and saving the rest.


Hi, hope everyone had a nice thanksgiving and you didn’t work to hard.  This thanksgiving I decided to go all out did the turkey, stuffing, gravy yes the works as much as it was fun I never missed my bed so much. But first I have to give thanks to  Ree Drummond  from the food network for her brine turkey I think every one should try this , it was the first time I every made a whole turkey and I must say  everything was on point so thank you Ree for coming through for my family and I . Can’t forget Ina Garten for her lovely Old-Fashioned Apple Crisp apple pie recipe which top everything off  along with  Haagen-Dazs coffee ice cream and for that Ina thank you . You all make my thanksgiving worth all the thanks.



My husband and I meet fifteen years ago at a park where we took our kids for exercise. I didn’t know at the time we were there for the same reason you see my son was getting a little to heavy and being school was out for the summer I took him there. And he was there for his daughter. We would meet every morning at the park, come to find out we had a little in common I have three kids one girl and two boys, he has one girl. They all born October, two years apart my son the 7th and she is the 8th  which I find was pretty cool, but it didn’t stop their he is July and I am also we are a day apart from each other at first I was like NO!! let me see some document some proof you know because what are the odds you meeting someone like that, but it’s true yeah.I guess God know what he was doing .So today is our anniversary  and I can’t believe it’s been fifteen years already. We went for breakfast this morring and it was nice . Can’t do much because he work till late, but I am going to meet him later with my thermos and have some hot chocolate with cream and do some flash backs on our past God is good.



So today I’m about to start my workout but I will have to push myself , I decided to meditate instead . I prepare myself  laying out my mat, got my tea  and I even put some lemon and clove in a bowl of hot water instead of  burning a candle.Then I got my face towel that was in the freezer and I proceed to start my music for relaxation. As I lay on my mat in total darkness I began to thank the lord,  for all the blessings he place upon me, my family and friends then I began praying. Our father in heaven hallowed be thy name, I repeated this three times  and  felt very heavy like I was about to cry but didn’t ,I continued and finished the lords pray. I pray for all the kids dying everyday the ones that got taken from their family and those suffering. For the first time I felt he was there and he was really listening to me.Then I saw myself trying to move but I couldn’t, so I started asking  him to open our hearts and show us it’s ok to put down the GUNS the HATE the DISLIKES the ANGER the JEALOUSY and pray, like Daniel (from the Bible) pray three times a day. Then I hear myself asking for clarity knowing  I had to keep my head straight because that’s where the path is not to the left or right, but I kept going off to the left and to right and I kept telling myself follow the sound of the music, and there I saw myself running knowing there’s something ahead of me that I couldn’t see clearly, something is blocking me.I started to smell the clove the heaviness had left and feeling a little lighter now I said Lord, show me the ways to walk in your path, that’s how I want to go, slowly I tilt  my head to the right and I smelt the food I had on the stove, and knowing it would be ok because someone will take care of it,  I kept thinking about it and the smell kept getting stronger and stronger. Then I heard myself say take three deep breaths and slowly breath out then slowly remove your face towel , God blessed.


This is what i made for lunch!!
